Bresaola Cotto Alla Brace
Bresaola is made from raw beef that has been salted and naturally aged. The meat, which is always eaten raw, has a delicate flavour and a capacity to melt in the mouth that is highly appreciated by food lovers. Italian leg of pork, gently boiled then oven roasted with rosemary and spices for a succulent texture and delicate flavour.
Finocchiona Milano
Finocchiona domestic. This typical salami, characterised by a distinctive flavour, was traditionally produced for centuries in Italian old country farmhouses and villages. Milano flavored salami is a subtle and flavorful blend of finely ground pork and beef that is mildly spiced.
Mortadella Napoli
A large, mild flavoured, soft-textured sausage made with pork fat, beef and veal. It's smoked and flavoured with garlic, spices and contains pistachio nuts. Fantastic in sandwiches. Napoli Salami is slightly smoked, creating a uniquely delicious experience. It is a mild mannered salami that should be eaten with mild cheese, fruit, and bread.
Parma Ham Veneto
Parma hams are seasoned, salt-cured and air-dried but not smoked. They have a rosy-brown flesh that is firm and dense. This is a characteristic salami with a most distinctive taste, made with the leanest pork meat. It has a soft, fine-grained texture, making it ideal for serving with barbecued or grilled polenta.
